Curried Okra

Ingredients:

  • 3 tablespoons sunflower oil
  • 300g okra, washed, well dried, tops removed and cut into small pieces
  • 1 teaspoon turmeric
  • 1 teaspoon Kashmiri chilli powder
  • 1 teaspoon ground coriander
  • 1 teaspoon amchoor powder
  • salt

Method:

  1. Wash the okra well in advance and lay on a tea towel to dry, preferably for a few hours or overnight until completely dry.
  2. Heat the oil in a frying pan.
  3. Add the okra and salt to season and stir well.
  4. Allow to cook on a medium heat, stirring frequently to keep it from sticking, until the okra is done. It will change from being slimy to quite firm.
  5. Add the spice powders using a measuring spoon and cook for a half a minute until they are cooked.
