Curried Okra by Monisha Bharadwaj
Curried Okra
Ingredients:
- 3 tablespoons sunflower oil
- 300g okra, washed, well dried, tops removed and cut into small pieces
- 1 teaspoon turmeric
- 1 teaspoon Kashmiri chilli powder
- 1 teaspoon ground coriander
- 1 teaspoon amchoor powder
- salt
Method:
- Wash the okra well in advance and lay on a tea towel to dry, preferably for a few hours or overnight until completely dry.
- Heat the oil in a frying pan.
- Add the okra and salt to season and stir well.
- Allow to cook on a medium heat, stirring frequently to keep it from sticking, until the okra is done. It will change from being slimy to quite firm.
- Add the spice powders using a measuring spoon and cook for a half a minute until they are cooked.
