Bacon, Spinach & Egg Bagel Sandwich

This bacon and spinach sheet pan egg bake provides options for an amazing breakfast that is filling and healthy. Enjoy the veggie and bacon egg bake as is for a protein filled meal or use a round cutter to cut out egg patties to build a bagel sandwich. Layer with melted cheese and top with sliced avocado for the ultimate breakfast sandwich!

Ingredients

  • 8 large eggs
  • 1/4 cup semi-skimmed milk
  • 1/4 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp kosher Salt
  • 1/2 cup shredded Mozzarella cheese
  • 1/4 cup cooked bacon, cut into pieces
  • 1/2 cup chopped red pepper
  • 1 cup spinach, roughly chopped
  • 2 Tbsp finely chopped chives
  • 1 Tbsp olive oil
  • 3-4 bagels
  • Slices of cheddar cheese (or cheese of choice)
  • 1-2 avocados, sliced

Steps

Preheat oven to 190°C.

Grease a quarter sheet pan with 1 tablespoon of olive oil and brush it onto the bottom and all sides of the pan.

In a large mixing bowl, whisk eggs, half and half, garlic powder, smoked paprika and salt until well combined.

Add remaining ingredients and quickly whisk until mixed.

Pour egg mixture into baking sheet and bake for 25 minutes or until just set.

Let it cool for about 10 minutes. Carefully cut egg bake with a round cookie cutter or lid and use a small rubber spatula to remove from pan.

Build bagel sandwich or bagel toast with a slice of cheese, egg bake patty, and slices of avocado. If desired, enjoy egg bake as is right from the sheet pan!
